Description

I love a BLT sandwich, but for lunch I think kids need something just a little more filling. Chicken fits the bill as healthy and affordable. These wraps are easy to make and easy to eat! I love packing them for lunch whether it’s for the kids’ lunches or a boat ride on the weekend.

Ingredients

  • 1 cup Grape Tomatoes, Diced
  • 1 package 2.5 Oz Package Real Bacon Bits
  • 2-½ cups Shredded, Cooked Chicken Breast
  • 4 whole 10" Tortillas / Wraps
  • 6 Tablespoons Ranch Dressing
  • 8 whole Large Lettuce Leaves

Preparation

Mix the first 3 ingredients together in a small bowl.

Note: When spreading the chicken mixture on the tortilla keep in mind that when you roll it up the last inch or so of the burrito would be best left with no chicken on it else it will “squeeze out”.

Put your tortillas on a work surface. Spread 1.5 tablespoons of ranch on each tortilla. Spread out 2 lettuce leaves on top of the ranch. Spread ¼ of the chicken mixture on the tortilla. Roll up the tortillas and secure them closed by wrapping each in a sheet of plastic wrap until serving.

Wanted something different and this feel right into that requirement. I did use bacon instead of the bacon bits (personal preference) and it was perfect for a light lunch.
