Description

Delicious slow cooker meal.

Ingredients

  • 14-½ ounces, weight Canned Diced Tomatoes, Undrained
  • 2 cups Chicken Broth
  • ½ cups Onion, Chopped
  • ½ cups Dry White Wine
  • ¼ cups Capers, Drained
  • 3 teaspoons Curry Powder
  • 1 teaspoon Dried Thyme
  • ¼ teaspoons Salt
  • ¼ teaspoons Ground Pepper
  • 15 ounces, weight Canned Artichoke Hearts, Drained
  • 2-½ pounds Skinless, Boneless Chicken Breast and/or Thighs
  • 3 Tablespoons Cornstarch
  • 3 Tablespoons Cold Water

Preparation

In a 4-5 quart slow-cooker combine undrained tomatoes, broth, onion, wine, drained capers, curry powder, thyme, salt and pepper. Then add artichokes. Place chicken on top and spoon some of the artichoke mixture over the chicken.

Cover and cook on a low-heat setting for 7-8 hours or on a high-heat setting for 3 1/2-4 hours.

After cooking is done, in a small bowl, stir together cornstarch and water. Stir into the artichoke and chicken mixture in the slow-cooker. Cover and cook on a high-heat setting for about 15 minutes more or until slightly thickened. Serve over basmati rice for a complete meal.

Yummy and super easy! We served over orzo since I was out of rice. Very good, I would make it again!

AWE. SOME. this was absolutely a winner from the word go. believe it or not I put the chicken in frozen. I added 1/2 a lemon cut face up placed on top of everything. Don’t know if it made any difference at all. Just wanted it to look cool when I opened it for everyone. Family and friends were all thumbs up. I give it a standing ovation.

I love recipes like this – super easy and tasty! I was worried the curry might be too strong, but it was just enough to give it some flavor without being overpowering. It’s interesting how the artichokes take on a different texture after being in a crock pot all day – much softer, but still delicious. Thanks for the recipe!

mmmmmm Left out the onion because we are not a big fan of onion . . . . delicious! When I stirred it up the chicken and artichokes fell apart. Everyone loved this from 18 month old baby, to 6 year old son and 9 year old son and 34 year old husband. =) super great. thanx!!
