Description

Chicken, beans, and sausage. YUM.

Ingredients

  • 1 Tablespoon Olive Oil
  • 1 whole Onion, Diced (small-medium)
  • 2 cloves Garlic, Minced
  • 2 whole Boneless, Skinless Chicken Breasts, Chopped
  • ½ pounds Fully Cooked Chicken Sausage (Diced!)
  • 2 cans (14 Oz. Size) Diced Tomatoes (No Salt Added)
  • 2 cans (15 Oz. Size) Great Northern Or Other White Beans
  • 1 Tablespoon Italian Seasoning
  • ½ cups Bread Crumbs
  • ½ cups Parmesan Cheese

Preparation

Heat a skillet over medium heat with a Tablespoon of olive oil in it. Cook the onions and garlic together with the chopped chicken until the chicken is lightly browned but not cooked all the way through, and the onions are translucent.

Transfer the mixture to your crock pot. Then add the diced chicken sausage, tomatoes, beans and Italian seasoning. Stir it all together.

Put the crock pot on low and go take a 4 hour bubble bath (unless you have kids then you should probably start the laundry and the dishes and referee fights over the WII remote).

About 10 minutes before serving, toss your bread crumbs topped with the cheese into a 400 degree F oven (on a sheet tray please…no melted cheese on the oven walls!) Then remove the pan from the oven and sprinkle the toasty goodness on top of the casserole.

This can be made in the oven if you forget all about dinner until 5 PM. If you do this, follow the directions but instead of putting the mixture into the crock pot bowl put everything into a casserole dish, bake for 35 minutes at 375F. Then remove it from the oven, put the bread crumbs and cheese on top, bump the heat to 400F and bake an additional 10 minutes.
