Description

My kids’ favorite way to eat spinach!

Ingredients

  • 1 box Jumbo Macaroni Shells
  • 1 whole Medium Onion
  • 3 cloves Finely Chopped Garlic
  • 2 Tablespoons Olive Oil
  • 2 cups Cooked Shredded Or Diced Chicken
  • 1 package Frozen Spinach, Thawed And Drained
  • 1-½ cup Sour Cream
  • ½ cups Grated Parmesan Cheese
  • Salt And Pepper, to taste
  • 1 jar Alfredo Sauce
  • 2 cups Mozzarella Cheese

Preparation

Cook jumbo shells according to package directions; drain and set aside.

Saute onion and garlic in small amount of olive oil. Add chicken and spinach and heat through. Stir in sour cream, parmesan cheese, salt and pepper.

Spoon mixture into jumbo shells and layer in a greased 9×13 baking dish. Pour the jar of Alfredo sauce over the top of the stuffed shells and sprinkle with mozzarella cheese.

Bake at 350F for 30 minutes.

Made this last night and it was such a big hit! I love making stuffed shells but my boyfriend can’t eat red sauce so this was a great variation and he and all his brothers LOVED it! I was expecting to have leftovers for my lunch today but no such luck! :)
