Description

This easy sandwich packs a ton of flavor, which makes it a favorite in our house.

Ingredients

  • FOR THE SAUCE:
  • 1 whole Roasted Red Pepper
  • 1 whole Green Onion
  • 2-½ Tablespoons Mayonnaise
  • 1 dash Oregano
  • 1 pinch Salt
  • 1 pinch Pepper
  • 1 Tablespoon Olive Oil

  • FOR THE PANINI:
  • 4 Tablespoons Olive Oil
  • 8 slices Bread, White, Wheat Or Sourdough
  • 16 slices Chicken Breast Lunchmeat
  • 4 slices Provolone Cheese
  • 1 whole Tomato, Sliced
  • 1 whole Roasted Red Pepper, Thinly Sliced

Preparation

First make the sauce in a food processor, or blender. Combine the roasted red pepper, green onion, mayo, oregano, salt, pepper and olive oil. Puree until mostly smooth, and easy to spread. You can make this ahead of time and keep it covered in the fridge.

Heat your Panini maker or grill pan, and spray with cooking spray. Brush olive oil on one side of the bread, then spread a layer of sauce on the opposite side. Layer your chicken, cheese, tomato and peppers. Top with another slice of bread, sauce side down. Repeat with remaining sandwiches. Cook until golden and the cheese is melted. Serve warm.

Delicious! I absolutely loved the red pepper and green onion mayo to go on the panini; it complimented it perfectly. I added sun-dried tomatoes instead of a tomato slice and used Swiss cheese–definitely going to make again!
