Description

A southern comfort food, this Chicken and Rice will cure what ails ya regardless of where you live.

Ingredients

  • 4 quarts Water, More Or Less, Enough To Cover Chicken
  • 1 whole (around 4 Pounds) Chicken
  • 3 stalks Celery, Roughly Chopped
  • 1 whole Large Sweet Onion, Roughly Diced
  • 1 teaspoon Pepper, Divided
  • 1 teaspoon Salt, Divided
  • ½ teaspoons Oregano
  • ½ teaspoons Celery Salt
  • 1-½ teaspoon Parsley, Divided
  • 3 cups Long Grain White Rice

Preparation

In a large stock pot, bring water, chicken, celery, onion, 1/2 teaspoon pepper, 1/2 teaspoon salt, oregano, celery salt, and 1 teaspoon parsley to boil. Cover and reduce to a simmer for at least an hour (2-3 hours would be preferable).

Once simmering is complete, remove chicken to cool in order to de-bone. Let broth continue to simmer and reduce.

When cool enough to handle, de-bone chicken.

Remove all broth from the pot (or use another pot) and put approximately 6 cups of broth back into the pot along with the rice, chicken, remaining pepper, salt and parsley. Cover and simmer for 15 minutes.

After 15 minutes, stir in another cup of broth. Cover and simmer for 5 minutes.

Continue to add broth, stir, cover and simmer for 5 minutes at a time until rice is done.

Salt and pepper to taste.

I was slightly disappointed with this. It seemed to lack taste. My kids didn’t like it. I didn’t mind it, was just hoping for more :-/ Ideas?

We had this for dinner tonight, and it was a smashing success. Two forks up! I dumped in a good dose of chopped garlic since we were out of celery, and added some sliced pickled jalapenos, cuz that’s just how we roll, but the end result was some seriously warm and tasty comfort food. Healthy, too! Awesome recipe, thanks!

This took a long time, over four hours all told. It dirtied lots of pots, cups, and spoons. When it was done, it was pretty bland. I won’t make it again, but it was edible and made a good bit of food.

Great recipe. We’ve added it to our regular menu list. Easy to make (although I need to get better at letting the chicken cool before tearing it into chunks, ouch!). We didn’t have celery or celery salt, so I added some minced garlic and seasoned salt to the mixture.Family said I should have added a bit more seasoned salt as I made a large batch.

My husband took the left overs and mixed with salsa, shredded cheese, sour cream and a dash of hot sauce, then ate with tortilla chips. Great variation on the recipe so leftovers are a bit different. Yummy both ways.
