Description

Broccoli, chicken, and rice combine with a cheesy sauce and a mushroom topping to create a delicious dinner dish.

Ingredients

  • 2 Tablespoons Unsalted Butter
  • ½ whole Sweet Yellow Onion, Chopped
  • 2 stalks Celery, Chopped
  • 3 cups Rice, Prepared
  • 1 bunch Broccoli Florettes, Chopped And Steamed
  • 1 cup Milk
  • ⅓ pounds Velveeta Cheese, Cubed
  • 2 pieces Cooked Boneless, Skinless, Chicken Breast, Shredded
  • 1 can (10 Oz. Size) Cream Of Mushroom Soup
  • ½ cups Mayonnaise
  • 8 ounces, weight Button Mushrooms, Sliced
  • 1 pinch Salt
  • 1 pinch Pepper

Preparation

Preheat oven to 350 degrees F.

1. In small pan over medium heat, sauté your onions and celery in the butter until softened.

2. Combine onion and celery mixture with the cooked rice in a large casserole dish. Stir in broccoli florettes that have been lightly steamed and chopped finely. Salt and pepper to taste. Set aside.

3. In small sauce pan bring milk to a light simmer over medium or medium low heat. Add Velveeta cheese and stir until cheese is melted. Pour cheese sauce over rice mixture in casserole dish.

4. Spread shredded cooked chicken breast in an even layer over rice mixture.

5. In small bowl combine can of soup, mayonaise and sliced button mushrooms. Add salt and pepper to taste.

6. Spread mushroom mixture evenly over chicken layer in casserole dish.

7. Place casserole in preheated 350 degree F oven and bake for 1 hour or until casserole is browned on top and bubbly.

This casserole is wonderful! My family enjoyed it and claimed it was their favorite chicken divan that I have made over the 25 years that I have been preparing and serving variations on chicken divan. The measurements can be adjusted and ingredients substituted to lower fat and calories. I will definitely be making this again.

I have to say seriously this is the best chicken and broccoli casserole I have ever had! I made a couple changes. I didn’t make enough rice, but I had some Chinese fried rice left over–I added it. I didn’t feel I had enough chicken, so I added a can of chicken that I shredded up (I do my shredding in the food processor). I also added chow mein noodles to the top only because I needed to use them up. I enjoyed the flavor. I also used regular shredded and sliced cheese. I am not a Velveeta fan. But this was amazing, and I highly recommend it. My daughter even ate it and liked it, and she is one picky eater!
