Monterey Jack cheese and green chiles stuffed in chicken breasts and rolled in spicy crumbs.
1. Preheat oven to 400 degrees F and coat a baking dish with cooking spray.
2. Combine bread crumbs with Parmesan and seasonings.
3. Lay pounded chicken breasts on your work surface. Spoon chiles in a row across center of each breasts. Add a strip of Monterey Jack cheese next to the chiles.
4. Roll up each breast and dip in melted butter, then roll in the crumb mixture.
5. Place in the prepared pan and bake uncovered in the 400ºF oven for 35–40 minutes or until juices run clear.
6. Pass salsa and sour cream for anyone who wants to top their chicken.

Very good – hubby enjoyed too (always a plus!). Served with black beans and a salad.
Easy to put together. Next time, I am going to use pepper-jack cheese. I think you could also make ahead and freeze for an easier week night dinner. Thaw, roll in butter and bread crumbs.
