Pretty darned close to Outback Steakhouse’s Alice Springs Chicken, only without the mushrooms, ONLY because I’m outnumbered by non-mushroom eaters (sigh). I highly recommend adding them, however. We MUST show non-mushroom eaters who’s boss!
Marinate the chicken:
Combine the olive oil, soy sauce, and steak seasoning in a small bowl. Pound chicken breasts (should be about 4 breasts) between two sheets of waxed paper. Place chicken in a Ziploc freezer bag, pour in the marinade, and seal. Marinate the chicken in the fridge for at least 30 minutes.
Meanwhile, cut the bacon slab in half and start frying it until it’s nice and crispy and golden-brown. While the bacon’s frying, make the honey mustard.
Combine the mayo, honey, lemon juice and mustard in a small bowl or measuring cup and set aside.
Heat up the indoor grill (or use the bacon pan with a tablespoon of the bacon grease if you don’t have one). Cook the chicken on the grill for about 6 minutes or so (if using the frying pan, that’s about 6 minutes on each side). When chicken is cooked through, plate it, brush it with the honey mustard, top with bacon slices (enough to cover the breast), and then top with 2 cheese slices. Cover with foil or stick in the microwave for a few minutes so the cheese can melt. Serve with extra honey mustard on the side and enjoy!
Note: If you’d like to add mushrooms (as with traditional Alice Springs chicken), they would be placed on top of the chicken underneath the bacon and cheese layers.

Looks great I will make this for my mushroom and pepper bacon loving man… I and completly agree with writing one’s own reviews… I suspect many authors write their own reviews under asumed names on Amazon. haha.

Okay, so it may be tacky to review my own recipe, but this truly is some kickin’ chicken, lol. It tastes almost identical to Outback Steakhouse’s Alice Springs Chicken. Seriously!
…Oh, and again, I highly recommend adding mushrooms to it!
