Description

This cheesy tomato bread is quick, simple and absolutely delicious!

Ingredients

  • 1 loaf French Bread, Sliced Lengthwise
  • 3 Tablespoons Butter
  • 1 Tablespoon Garlic Powder, To Taste
  • 4 whole Tomatoes Thinly Sliced
  • 1 teaspoon Kosher Salt
  • 2 Tablespoons Olive Oil
  • 2 teaspoons Oregano
  • 8 ounces, weight Sliced Or Shredded Mozzarella Cheese

Preparation

* Ingredient amounts are approximations. This is a great recipe to experiment with and adjust to your tastes.

Preheat oven to 500 F. Spread each half of the bread evenly with butter and sprinkle with garlic powder. Lay the tomato slices on top, then sprinkle with salt, olive oil and oregano. * Note: If you are using juicy garden tomatoes, you may want to let the slices sit on a paper towel for a minute before laying them on the bread.

Top with cheese and place on a foil lined baking sheet. Bake for 5-7 minutes, or until the cheese melts and the bread begins to toast. Turn the oven to broil and and leave them in the oven for 2-3 minutes longer, or until the cheese browns. Remove the bread from the oven, slice the bread into 4-inch sections and serve.

This was super yummy!! I used a frozen multigrain loaf I had, thawed, added Smart Balance margarine, a good coating of garlic powder, just 1 large (garden fresh – yuum!!) tomato, thin sliced, etc. I followed all the ingredients, just didn’t measure anything – only used a tiny sprinkling of salt and a very small amount of olive oil. Baked 5 minutes at 500 and 2 minutes under the broiler on lo. I added a little grated parm to one half of the loaf too. Absolutely delicious!
