Description

Cheesy spinach artichoke pizza on whole-wheat-based crust! Perfect way to sneak in loads of spinach in a super flavourful pizza!

Ingredients

  • FOR THE CRUST:
  • 1 envelope (1/4 Oz. Packet) Yeast
  • ½ teaspoons Honey Or Sugar
  • ½ teaspoons Olive Oil, Plus More For Greasing Bowl
  • ¾ cups Warm Water
  • 1 cup Whole Wheat Flour
  • ¾ cups All-purpose Flour
  • ½ teaspoons Salt
  • ¼ teaspoons Chili Flakes (optional)
  • FOR THE TOPPINGS:
  • 1 Tablespoon Olive Oil
  • 6 cloves Garlic, Finely Chopped
  • ½ teaspoons Dry Parsley Flakes
  • 2 cups Chopped Fresh Spinach
  • 7 ounces, weight Artichokes, Chopped
  • ¾ cups Parmesan, Shredded, Divided
  • ¼ teaspoons Salt, Or To Taste
  • ¼ teaspoons Black Pepper
  • 5 ounces, weight Mozzarella Fresh, Shredded

Preparation

For the crust :
In a big bowl, add yeast, honey/sugar and oil to warm water and let it sit for 10-15 minutes until it bubbles up. To it, add both flours, salt and chili flakes. Knead for 5-6 minutes until it comes together and is smooth. Coat a big bowl with little oil and place the dough inside. Wrap with plastic wrap and let it sit in warm place until it doubles up, up to 1 hour or more.

Assembling the pizza:
Preheat oven to 420ºF.

In a small pot, heat oil. Once hot, add chopped garlic and cook it on medium-high. Once garlic starts turning golden, add parsley flakes and turn off the gas. Add little salt and mix.

Roll the pizza dough and transfer it to a parchment paper-lined baking sheet. Add half of the garlic-parsley oil to it and spread using back of spatula or hands. To the remaining garlic-parsley oil, add spinach and cook on medium-high until it wilts and all the excess water evaporates. In a bowl, mix wilted spinach mix, artichokes, 1/4 cup shredded parmesan, salt, black pepper. Mix and taste. Adjust salt if needed.

Add some Parmesan and mozzarella evenly on the pizza. Add the spinach artichoke mix all over it and finally add the remaining mozzarella and Parmesan.

Transfer pizza to oven. After 5 minutes, lower the oven temperature to 375ºF and bake it for 22-25 minutes until cheese gets bubbly and golden. Cut in pieces and serve hot.
