Description

A wonderful cheesy potato side dish, great for potlucks.

Ingredients

  • 1-½ pound Potatoes
  • 1 cup Grated White Cheddar Cheese
  • 1 whole Red Onion, Chopped
  • ½ blocks (8 Oz. Block) Cream Cheese, Cubed
  • 1 jar (about 16 Oz. Jar) Alfredo Pasta Sauce
  • 2 Tablespoons Dijon Mustard
  • 1 teaspoon Dried Parsley
  • 2 teaspoons Dried Garlic
  • 1 teaspoon Salt
  • ½ teaspoons Pepper

Preparation

Cut the potatoes in half and then cut each half into 1/4 inch slices; put the sliced potatoes into a 4-5 quart slow cooker. Add the grated cheese, chopped onion and cream cheese to the potatoes and combine.

In a medium bowl combine the Alfredo sauce, Dijon mustard, parsley, garlic, salt and pepper and blend together. Pour the sauce over the potato mixture in the slow cooker and mix well. Cover and cook on LOW setting for 6-8 hours.

I hope you all enjoy them as much as we do – they also freeze really well (just defrost and reheat in the microwave), and my husband likes them cold too.

I so wanted to like this recipe! It’s similar to a dish I make with velveeta and miracle whip called baked potato salad but seemed much easier in the crockpot with more sophisticated flavors. However, I did not care for this at all. I was so overwhelmed by the alfredo sauce that none of the other flavors would come through. Alfredo sauce and potatoes is just not a combination I care for apparently but I think this is a really great and easy way to make a side dish so I plan to give this recipe one more try but instead of alfredo sauce I’m going to try cream of mushroom soup minus the mustard too.
