Description

This dinner is perfect for a busy weeknight. Five ingredients and simple steps to complete a delicious and fast dish!
You can’t beat that!

Ingredients

  • 4 whole Skinless Chicken Thighs
  • 1 Tablespoon Lime Juice
  • 2 teaspoons Taco Seasoning
  • 4 whole Green Chiles, Canned
  • 4 ounces, weight Fresh Mozzarella

Preparation

First preheat your oven to 400 degrees F.

Then place the chicken thighs into an 8×8 baking dish. Add the lime juice evenly over the chicken thighs. Then sprinkle evenly 2 teaspoons of taco seasoning over top of the chicken thighs.

Cut the whole green chiles lengthwise, but only on one side (butterfly cut) and lay them over top of each chicken thigh.

Cover the baking dish with foil and bake for 30 minutes. After 30 minutes, remove the foil, add 1 ounce slices of fresh mozzarella on top of each chicken thigh and bake for 5 more minutes or until the cheese melts.

To serve, spoon 3 Tablespoons of the pan drippings/broth over the chicken thighs and enjoy!

Thank you! Look, theres n0 (or very little) carbs starches sugars…. I can have something yummy again! I recently found out I am diabetic, so nice finding food that don’t appear to come from a diet cook book.

I used chicken breasts since that’s what I had. They turned out pretty juicy for a baked chicken breast and they tasted good too!

This recipe is FANTASTIC!!! Super easy, fast, and so wonderfully flavorful. My whole family enjoyed it. Instead of using the pan drippings I served it with a pile of salsa on top of each one and would definitely recommend eating it that way. I added a bit of sour cream to mine as well; also awesome.
