These are a delicious combination of Boursin, mozzarella, chicken and baby portabellas, perfect for dinner or as a party appetizer.
Pre-heat oven to 375 degrees.
Slice baguettes in half lengthwise and place on a baking sheet. Crumble Boursin cheese over baguette halves and spread as evenly as you can. I only used about half of the second wheel of Boursin, depending on the size of your bread, you may use more or less. Press the cooked, shredded chicken over the Boursin. Sprinkle each with about mozzarella. Sprinkle red pepper and onion over mozzarella and layer on mushroom slices. Bake for 15 minutes or until cheese is melted and bread is browned around the edges. Slice in fourths and serve.
