This was delicious! My kids all really liked it and my husband, who came home later, said ‘have we had this before, this is really good!’ So there you have it. Very easy, quick and delish!

My family really enjoyed this! Chose to use the sour cream, and used white rice. The only other change was to serve the corn on the side because my family doesn’t like it mixed in. Super easy and good, so I will definitely make it again.

This was very good. My kids didn’t eat any; but who am I kidding they don’t eat anything. My husband and I though loved it. I especially loved how quickly it came together.
When I made it I used a little more salsa and more black beans.

I thought this was a fantastically simple yet yummy meal. Of course, I probably added a little more cheese because one can never have too much cheese. I also seasoned my chicken as it cooked with a 1/2 tsp cumin, 1/4 tsp paprika, and 1/4 tsp cayenne, but you could also use a taco seasoning packet and it would be just as tasty.
I added a little bit (okay a lot) of freshly shredded monterey jack cheese too just because I had some and I added a spoonful of homemade guacamole to my plate as well. I’m guessing that my version is no longer “healthy” but I’m okay with that.
You can definitely make this meal your own and customize it any way you like. Thanks for sharing!

It was pretty good. The worst part is the brown rice, so next time we will make it with white rice.

As is, I found it slightly bland. If I make it again I will definitely be adding more spices. A good base to go off of though.

I used white rice and added a little more sour cream–it was very good and I thought it tasted even better as leftovers the next day!

Made this tonight and it turned out so good! I did add 2 cups of white rice and 2 cups of mexican style rice a roni instead of the brown rice. For sure will be making this again soon and will make for my whole family too!

I made this recently and it was a hit at our house! I made the recipe exactly as directed (I used the sour cream version.) I think you do have to cook the chicken first given the instructions on how long to bake. I would definitely make this again and for our taste, I would probably add another can of green chillis, more corn and more salsa (probably more sour cream as well.) Great taste!!

So, YES, you need to cook the chicken first because it’s most certainly not done in 20 minutes, even in a shallow dish. I also cut it into cubes and it still didn’t cook in 20 minutes.
