Description

Chicken, cheese and cilantro pesto all rolled up into a crispy little package. Make these for an easy dinner or serve as an appetizer!

Ingredients

  • 2 whole Boneless, Skinless Chicken Breasts
  • 2 Tablespoons To 3 Tablespoons Olive Oil
  • 1 teaspoon All Purpose Seasoning Salt
  • 1 teaspoon Cumin
  • ½ cups Cilantro Pesto (see My Recipe Box)
  • 20 whole 8 Inch Flour Tortillas
  • 2 cups Grated Pepper Jack Cheese (or Any Cheese You Prefer)

Preparation

For the chicken:
Toss the chicken breasts with olive oil, seasoning salt and cumin. Grill or pan-sear and bake until fully cooked. Remove and let cool before chopping the chicken up into small pieces.

For the flautas:
Spread a teaspoon (more or less) of pesto on one side of a flour tortilla. Top with a little chopped chicken, shredded cheese and then roll into a cigar-like shape.

Place the rolled tortilla, seam side down on a large rimmed baking pan. Bake at 350ºF for 10-12 minutes or until crispy and brown. Repeat with any remaining tortillas.

Serve with sour cream, salsa, guacamole, and hot sauce if desired.

These are so absolutely yummy!!!! They are just about the perfect flauta! I used whole wheat tortillas and extra sharp cheddar cheese, and they turned out wonderfully. Thanks for sharing this great recipe! I’ll make these again!

Gahh, I’m obsessed with these. Crisp on the outside, flavorful, soft and melty on the inside, and yes, the pesto is awesome. I even made a few extras, popped them in the freezer, and my hubby ate them after a late night (they freeze great). This recipe is a total keeper– thanks!

These were AMAZING! I absolutely loved the cilantro pesto, there’s so many things you could do with it, including eat it off a spoon. I cleaned out my food processor with a piece of bread it was so delicious!
