Description

This is almost so simple it makes you doubt how good it will be! But it was so great, and it’s the perfect “throw together” meal after an extra busy day. The BBQ sauce makes this dish unique.

Ingredients

  • 3 cups Macaroni Style Uncooked Pasta (Long Sticks, Not Traditional Macaroni)
  • 1 pound Ground Beef
  • 1 whole Medium Onion, Diced
  • ¼ cups Fresh Parsley, Chopped, Divided Use
  • 1 cup Milk
  • 2 cups Your Favorite BBQ Sauce
  • 1 cup Shredded Mozzarella Cheese
  • 2 cups Shredded Monterey Jack Cheese
  • BBQ Sauce As Garnish

Preparation

Heat oven to 350F. Spray a 2 quart casserole dish with cooking spray. (I used my Pampered Chef round baker.)

Cook and drain pasta according to package directions. Set aside.

In a large skillet, cook beef and onion over medium heat for 8-10 minutes or until beef is brown. When it’s done, drain off the grease. Stir pasta, 3 Tablespoons of parsley, milk, BBQ sauce, mozzerella cheese and 1 cup of Monterrey Jack cheese into the beef in the skillet. Stir well.

Spoon mixture into the prepared casserole dish. Sprinkle with remaining 1 cup Monterey Jack cheese and parsley, plus a swirl of BBQ sauce across the entire surface.

Bake uncovered 30-40 minutes, or until hot and bubbly.

Easy weekday meal with good flavor. We made this with the Italian sausage I had on hand and added corn to get a veggie in front of my picky eaters. Slim D’s regular was our barbecue sauce of choice. All plates were left clean – this goes in the repeat file!

I made this tonight, and it was so good! I used sharp cheddar cheese instead of the mozzarella, since I love the taste of cheddar with BBQ sauce, and used chicken instead of beef. I also assembled it ahead of time (I have a fussy 5-month-old and need to take the opportunities when they come) and then baked it around dinnertime, and that worked great. I bet you could make it ahead and freeze it, too. Thanks for the recipe — this will definitely be put into my rotation, especially since my picky 3-year-old liked it.
