Preheat oven to 350ºF. Spray a baking dish with cooking spray and arrange the crescent rolls to completely cover the bottom, pressing the seams to seal.
In a large skillet, brown the ground beef with the onions until the meat is no longer pink. Next add the ketchup, mustard and 3/4 of the cheese (leaving the rest for the topping) and stir to completely combine. Evenly pour the meat mixture over the crescent rolls and top evenly with the tater tots.
Bake for 30 minutes. Then sprinkle remaining cheese over the top of the tater tots and continue baking for an additional 7-10 minutes or until the cheese is melted.
Serves 8-10 or more, depending on how big you cut the pieces.
