Description

This is one of my husband’s favorite meals. He requests it at least once at week. I love it because it is quick and easy and SO much beter than any boxed brand!

Ingredients

  • 8 ounces, weight Elbow Macaroni
  • 1 pound Lean Ground Beef
  • ¾ cups Onion, Chopped
  • 2 Tablespoons Butter
  • 2 Tablespoons Flour
  • 2 cups Milk
  • 8 ounces, weight Cheddar Cheese, Shredded
  • 1 can (10 Oz. Can) Ro-Tel Tomatoes
  • Salt And Pepper, to taste

Preparation

1. Begin by preparing water for pasta. Cook pasta according to package directions.

2. In a large skillet, cook ground beef and onion until meat is done and onions are tender. Set aside.

3. To make the cheese sauce, in a small saucepan, melt butter over medium heat. Add flour. Stir in milk. Cook and stir over medium heat until thick and bubbly. Add cheese and stir until combined.

4. Add meat and onions, cheese sauce, and Ro-tel tomatoes to macaroni. Stir until everything is combined. Add salt and pepper to taste.

My husband liked this but the kids and I didn’t. The sauce wasn’t smooth and cheesy like I had hoped it would be. It was sort of that lumpy texture you get with Cheddar cheese. If I can tweak the sauce to our liking then this would be a really good dish. I also might leave out the Rotel next time since I have very picky kids.
