Description

An easy and cheap “cheater” chicken pot pie that isn’t really a pie at all but chicken pot pie filling on toast!

Ingredients

  • 1 whole Large Onion
  • 4 cloves Garlic, More Or Less To Taste
  • 1 can (10.75 Oz. Can) Cream Of Mushroom Soup
  • ¾ cups Milk
  • 1 Tablespoon Flour
  • 2 Tablespoons Water
  • 1 Tablespoon Butter
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 1 Tablespoon Poutlry Seasoning
  • ½ cups Peas
  • ½ cups Diced Carrot
  • ½ cups Corn
  • 1 whole Rotisserie Chicken
  • 1 loaf Bread (or Buns)

Preparation

In a large frying pan or pot, saute on medium heat the chopped onion with garlic until transluent.

Add cream of mushroom soup with milk. Stir well until soup mixture is smooth.

In a small glass combine flour with the water and stir until smooth. Add the slurry to the pan with the butter and mix well. Allow to come to a boil.

Add salt, pepper, and poultry seasoning or any other spices.

Add peas, carrots, and corn. Take meat off the bone from a rotisserie chicken and pull meat into bite size chunks. Add to the pot. Allow to gently boil until mixture thickens. The longer it sits, the better it gets!

When ready to eat, toast bread well and butter. Scoop 1/2 cup of mixture onto each piece of toast. Serve and enjoy!

This would be very good on biscuits (you don’t even have to make your own – the ones out of the can would do).

I made this and poured the filling into a pie crust, topping with bisquick-one word…AMAZING!!! Also really easy to freeze and then bake.
