A great dinner for meatless Mondays! Cauliflower steaks are hearty, packed with nutrition, and filling!
Preheat oven to 400°F.
First, you need to slice out your cauliflower steaks. To do this, cut two 1-inch thick slices from the center of the cauliflower and set aside.
Cut the remaining cauliflower into small florets and set on a roasting pan. Drizzle with olive oil and sprinkle curry powder on top. Roast cauliflower for 25 minutes.
In a sauté pan, heat 1 tablespoon olive oil over medium heat. Cook the cauliflower steak one at a time for 2 to 3 minutes per side. While steaks are cooking, add roasted cauliflower, heavy whipping cream, salt and pepper to a food processor. If needed, add more heavy cream to thin puree. I also added a bit more curry powder for more flavor.
Spread about ¼ cup cauliflower puree on the bottom of a plate and top with a cauliflower steak. Season with salt and pepper. Enjoy!
