Description

Sliced tomatoes, mozzarella and fresh basil leaves offer the perfect combination for a flavorful and delicious grilled cheese sandwich.

Ingredients

  • 2 slices Italian Bread
  • Butter As Needed To Butter Both Sides Of Each Slice Of Bread
  • 2 slices Part Skim Mozzarella Cheese (I Use Frigo Block Of Mozzarella Cheese)
  • 2 whole Grape Tomatoes, Cut Crosswise Into 1/8-inch Slices, Divided
  • Salt And Freshly Ground Peppercorns, To Taste
  • 2 leaves Fresh Basil
  • Olive Oil

Preparation

Preheat a panini maker according to manufacturer’s instructions.

Generously butter both slices of bread, on both sides. Set the slices of bread on your work surface.

Build your sandwich. Place a slice of mozzarella cheese on one slice of bread. Add half of the sliced tomatoes on top of the cheese. Season with salt and peppercorns. Add basil leaves. Top with the remaining tomatoes. Drizzle with olive oil. Add another slice of mozzarella cheese, and top with the other slice of bread.

Place onto the hot panini press. Allow it to grill for about 1 minute, or until lightly browned and cheese is melted. Serve immediately.
