Description

Campanelle alla Mozzarella is campanelle pasta with fresh mozzarella, basil and tomatoes.

Ingredients

  • 1 whole Large Tomato, Diced
  • Salt And Pepper
  • 1 bunch Handful Fresh Basil, Roughly Chopped
  • 1 whole Ball Of Fresh Mozzarella (about 8 Oz. Ball)
  • ¼ cups Extra Virgin Olive Oil - Enough To Coat
  • 1 box (16 Oz. Box) Campanelle Pasta
  • 2 Tablespoons Parmigiano Reggiano Cheese, Grated (Enough To Garnish)

Preparation

Dice your tomato and place it into your serving bowl. Season with salt and pepper. Add chopped basil, diced mozzarella and drizzle enough olive oil to coat (you don’t want this drowning; oil amount will depend on how large your tomato is). Set aside. Place a large pot of water on to boil. Season generously with salt. When boiling, add pasta and cook until aldente.

When pasta is al dente, drain and immediately add to the serving bowl. Toss gently to combine. Drizzle with a little additional olive oil and garnish with Parmigiano Reggiano.

This is a new fave! I used cherry tomatoes…which were delicious. I also threw in some garlic salt (or powder would work too), and it was the perfect addition :)

I made this as a side to roasted chicken, strawberry spinach salad, and roasted asparagus. It was SO easy and our guests asked what the dressing was made of…we will definitely make it again!

This was tasty. We served it as a side dish to grilled chicken. It tastes good cold, too. I liked that the recipe is so quick to make. Next time we plan on using cherry tomatoes for more flavor.
