Description

I created this recipe when I had a pound of kielbasa and no ideas for how to use it. I took another recipe that called for ground beef, kept the structure, but altered the seasonings and some of the ingredients and came up with this.

Ingredients

  • 1 Tablespoon Olive Or Vegetable Oil
  • ⅓ cups Onion, Chopped
  • ⅓ cups Green Pepper, Chopped
  • ⅓ cups Sweet Red Pepper, Chopped
  • 1 pound Kielbasa, Sliced
  • 2 teaspoons Cajun Seasoning Blend (I Used Penzey's)
  • ⅛ teaspoons Cayenne Pepper (Optional)
  • 1 can (14.5 Oz. Can) Diced Tomatoes With Liquid (Muir Glen Fire Roasted Is What I Used)
  • 1-½ cup Chicken Broth
  • ¾ cups Long Grain Rice

Preparation

In a large skillet over medium high heat, heat oil and add vegetables and kielbasa. Sprinkle Cajun seasoning and cayenne over the vegetables. Saute until onion is translucent, peppers have softened, and kielbasa is lightly browned.

Add remaining ingredients, bring to a fast simmer, and cover. Cook for 20 minutes or until all liquid is absorbed.

Fast, easy, excellent! Big hit with the picky kids and a friend whose mother ended up calling for the recipe because he praised it so much! It’s a keeper!

We loved it here in mi casa. The picky kids, the picky friend’s son – it was fast, it was easy, it was delicious! The leftovers are great too! Keeping the ingredients on hand all the time!
