Description

One of the best pasta dishes you will ever eat!

Sauce recipe partially adapted from The Pioneer Woman.

Ingredients

  • FOR THE SAUCE:
  • 2 Tablespoons Olive Oil
  • 2 Tablespoons Butter
  • 1  Small Diced White Onion
  • 4 cloves Garlic, Minced
  • 2 cans (15 Oz. Size) Tomato Sauce
  • 2 cups Diced Tomato
  • 1 cup Heavy Cream
  • 1 Tablespoon Red Crushed Red Pepper
  • 2 teaspoons Red Pepper
  • 1 Tablespoon Garlic Powder
  • 1 Tablespoon Onion Powder
  • 2 Tablespoons Italian Seasoning
  • 2 teaspoons Oregano Flakes
  • 5 whole Fresh Basil Leaves, Chopped
  • Salt And Pepper, to taste
  • 5 ounces, weight Parmigiano Reggiano Cheese
  • FOR THE PASTA:
  • 1 pound Linguine Cooked Al Dente
  • Olive Oil, As Needed
  • 1 pound Sea Scallops
  • 1-½ pound Andouille Sausage, Chopped
  • 1 pound Cooked Shrimp
  • 8 ounces, weight Jumbo Lump Crab Meat
  • Salt And Pepper, to taste

Preparation

For the sauce:
1. In a medium-sized pot, heat the oil and melt the butter at the same time. Once the butter melts , add the onion and garlic and saute for 5 minutes.

2. Add the tomato sauce and diced tomato and allow to simmer for 15 minutes so it can thicken. Once that has happened, add the cream and stir to make sure it is evenly mixed. Begin to add all seasonings (i.e. red crushed pepper, red pepper, garlic powder, onion powder, Italian seasonings, oregano, basil, and salt and pepper). Stir well and lastly, add the cheese and set the heat on simmer and repeatedly stir to make sure the sauce doesn’t stick to the pan.

Now start to boil the water for your linguine. When the linguine is finished and drained, drizzle with oilive oil so the noodles won’t stick and dry out.

3. In a separate skillet, drizzle olive oil and turn to medium high heat. Once the skillet is hot, add the sea scallops and sear on each side for about 3 minutes until golden brown. Once the scallops finish cooking, turn to a plate and set aside.

4. Using the same skillet, drizzle more olive oil and add the sausage and shrimp. Cook for about 10 minutes. Now bring the scallops back to the skillet, joining the shrimp and sausage and add the crab meat. Cook all the meat together for about 5 minutes then add to the sauce and allow to simmer for 10 minutes.

5. Plate the linguine, spoon a healthy helping of the sauce on top and serve.
