Description

This is a family favorite and it’s good for you.

Ingredients

  • 8 pieces Boneless, Skinless Chicken Breasts
  • ½ cups Flour
  • 1 teaspoon Salt, Divided
  • ¾ teaspoons Oregano
  • ½ teaspoons Thyme
  • ½ teaspoons Basil
  • ½ teaspoons Salt
  • ½ teaspoons Paprika
  • ¼ teaspoons Freshly Ground Black Pepper
  • ½ teaspoons Cayenne Pepper
  • ¼ teaspoons White Pepper
  • 3 cloves Garlic, Minced
  • ¾ cups Chopped Onion
  • 2 stalks Celery, Diced
  • 1  Green Pepper, Chopped
  • 1  Tomato, Coarsely Chopped
  • 1 Tablespoon Olive Oil
  • 1 can (10.5 Oz. Size) Chicken Broth
  • 1 can (8 Oz. Size) Tomato Sauce

Preparation

Preheat ovento 350ºF.

Shake chicken in a plastic bag filled with flour and half of the salt until chicken is coated. Place chicken in a single layer in a shallow baking pan and bake for 25-30 minutes until cooked through.

While chicken is baking, combine oregano, thyme, basil, remaining salt, paprika, and peppers, and set aside.

In a large frying pan, saute garlic, onion, celery, green pepper, and tomato in oil. Add a splash of water and cook vegetables until soft.

Mix in seasoning mixture and let simmer for about a minute.

Mix broth and tomato sauce. Bring to a boil, then simmer for 5 minutes.

Combine seasoning mixture and broth and tomato sauce mixture together and pour over top of cooked chicken. Return to oven for about 15 minutes.

Note: the leftover vegetable sauce is great on baked potatoes.
