Description

Yummy black beans that taste like the ones from the Cafe Rio chain.

Ingredients

  • 2 Tablespoons Onion, finely chopped
  • 2 cloves Garlic, Finely Chopped
  • 1 Tablespoon Extra Virgin Olive Oil
  • ½ teaspoons Cumin
  • 1 can (15-16 Oz. Size) Black Beans
  • 8 Tablespoons Tomato Sauce
  • 3 Tablespoons Cilantro, Chopped

Preparation

Chop onions and garlic. Heat extra virgin olive oil on medium high heat and cook onions and garlic with cumin until soft. Add all other ingredients and simmer at least ten minutes.

Best served with Lime Cilantro Rice.

*You could use the same amount of presoaked, dry beans.

Made it from memory–delicious too! I mixed in some pre-cooked brown rice and served with chicken enchiladas with green sauce (green chicken just sounds wrong).

I just made these for dinner. I didn’t have any tomato sauce, so I ended up using RoTel instead, but I’ll tell you it was completely delicious anyways! It was so great eating such a cheap, healthy, delicious meal!! I will definitely be making this again. My husband even loved it, and he MUST have meat.

Mighty tasty beans! Veeery similar to Cafe Rio but not exact, but if you’ve never had the Cafe Rio version, and don’t crave it from half a continent away, these are delightful.

Love it! Never heard of Cafe Rio. But I got a Puerto Rican background and these taste great! Just served with rice and a steak.

Very easy and tasty–didn’t even bother printing out the recipe! I mixed some pre-cooked brown rice (from Trader Joe’s) in with the black beans for the last few minutes of cooking and served them with chicken enchiladas (with green sauce). Wonderful.

I love these beans, even if they aren’t quite the same as my beloved Cafe Rio. They are DELICIOUS. Even my black bean disliking husband enjoyed them!
