This was just incredible. I wound up roasting a butternut squash myself, as I couldn’t find anything already prepared in my grocery store. It was easy and it only took a couple hours, but the results tasted like I’d slaved in the kitchen all day long.

This was delious! My kids are box mac and cheese eaters and I was searching for something that is similar in look, but would open them up to a different taste, while getting a extra vegetable in. I couldn’t find squash puree, so I cheated (huge time saver) and bought a few jars of butternut squash baby food. It was delicious. Even my husband who has always said that one shouldn’t be bothered making homemade mac and cheese, ate two full servings! Thank you for a recipe we will use again and again!

Delicious and very simple. I substituted an heirloom yellow squash from the garden for the butternut squash. This recipe is very tasty and super simple to prepare. The texture is great. My 16 month old loved it. Thanks for the awesome recipe. I needed a use for all those squash we are growing.

Even better the more you let it sit. Loved it. I ate most of it over the span of a couple of days.

I LOVE homemade mac and cheese – nothing in a box can compare in my book. I tried a recipe using butternut squash a while ago but was disappointed before. Not this time. This recipe is AWESOME. It was incredible!! Just the right cheesiness, a hint of the buttery squash flavor, great balance of flavors. I added some steamed broccoli to my cooked pasta for a perfect dinner.

YUM!! I microwaved my squash to soften (12 min in an 1″ of water) and then didn’t bother to puree it, just mushed it a little after I scooped it out of the shell. I used some parmesan –cuz I like it. Next time I will add more squash just so I don’t have leftover squash. I might also need to just make more to satisfy my family of 6–we had NO leftovers.

Yum yum yum!! I made this last night and it was a huge hit at our home. I think I may substitute the nutmeg with ground mustard next time!

This was very quick and easy. I roasted a butternut squash in the oven as I would with any butternut squash and it was a nice add to the macaroni. Next time though I think I’ll play around with the cheese….the monterey jack was a little too plain for my tastes.

I was so excited to try this… since I had little time I used baby food butternut squash since I had some one hand. This was a great recipe and a good twist on mac and cheese. The only thing I’d change next time that I wish the cheese was a little sharper… next time I’d probably mix in some sharp cheddar with the montery jack just to suit our tastes a little better. Thanks for sharing!

YUM!! Even my very picky kids ate this and had no idea squash was in there, not even the 11yr old. ;D I microwaved the butternut squash to soften, but didn’t puree it, because I am quite lazy, so it was only mushed. SOOO GOOD!!!

This was yummy and easy! I roasted the squash myself and it added a great flavor to traditional mac and cheese. My kids, husband and I enjoyed it and we will have it again soon!

has anyone ever used some butternut squash soup as a sub? I have a carton at the house and I am looking for a way to use it.
