My little cheat for butternut squash puree is…shhh…run to the baby food aisle and pick up a couple of cups of squash baby food! Dirt cheap and almost the same consistency, especially if you’re mixing it in to a recipe.
This recipe looks suspiciously like something that will be in my belly later today.

This sounds great! I make a version of this that came from a Rachel Ray recipe that is delicious but a little more “involved”! I’ll definitely be trying this version soon!

Just made this for dinner (mind you, I live alone so 4 servings created a lot of leftovers!). So delicious, I was almost tempted to add some tabasco to it for a little heat! And I bet some grilled chicken mixed in would be amazing, next time I’ll play around some more! But thanks for the recipe
my stomach will be quite happy for the next 4 days or so…

Wow – what great comfort food!!
It is cold, windy and rainy here today in the Adelaide hills of South Australia and this is just the meal that will warm us up and use up the organic pumkin I have in the fridge!!

I am trying this tomorrow. I love Butternut squash. Do you get the butternut squash flavor in this dish?

I realized that maybe people don’t know where to find butternut squash puree, since some people have mentioned they couldn’t find any. It comes frozen in those small rectangular bricks. It will usually says say “Cooked Squash” on it, but it is definitely a puree. One brick is all you’ll need for half a cup (you’ll have extra).

super quick! I didn’t have butternut squash in my house so i used sweet potato. Just a yummy. Came together in no time and looked better than any box. thx for the extra veg in my families bellies!
