Description

A delicious Ecuadorian dish packed with fresh butternut squash, garlic, corn, peas, tomato, and feta cheese. Serve with rice or quinoa. Perfect comfort food!

Ingredients

  • 2 Tablespoons Extra Virgin Olive Oil
  • 1 whole Onion, Chopped
  • 3 cloves Fresh Garlic, Minced
  • ½ cups Frozen Peas
  • ½ cups Frozen Corn
  • 2 Tablespoons Tomato Paste
  • 3 pounds Butternut Squash, Peeled And Chopped
  • 5 ounces, weight Feta Cheese

Preparation

Heat a large pot over medium heat. Add olive oil and sauté onions and garlic until translucent in color. Add frozen peas, corn, and tomato paste and cook for 3-4 minutes, stirring frequently.

Add chopped and peeled butternut squash and reduce heat to low.

Cover the pot and let cook for 20-30 minutes, until squash has become soft and slightly chunky.

At about 5-10 minutes before serving, add feta cheese and stir. Serve and enjoy!

It actually is fine, because it starts to steam and the frozen vegetables add a bit of moisture. Thanks for the lovely comments ladies!

Do we need to put any liquid in the pot with the squash, or is it fine just how it is without burning?

Made this tonight to pack in lunches for the week as I have some veggie phobic family members. All I can say is YUM! And super easy!
