Description

PURE HEAVEN. What more can I say? This recipe will feed my large family, but I always double it so I can have leftovers for lunch all week.

Ingredients

  • 1 whole Rotisserie Chicken, Skin And Bones Removed And Cut Into Bite-size Pieces
  • 2 Tablespoons Butter
  • 1 whole Medium Onion, Chopped
  • 2 teaspoons Garlic, Minced
  • 1 Tablespoon Fresh Ginger, Minced
  • 1 teaspoon Indian Chili Powder Or Cayenne Pepper, Use Less If You Don't Like It Spicy
  • ½ teaspoons Turmeric
  • ¼ teaspoons Ground Cinnamon
  • 1 can (14.5 Oz. Can) Chopped Tomatoes, Including Juice
  • 2 Tablespoons Tomato Paste
  • 1 Tablespoon Brown Sugar
  • ½ teaspoons Salt
  • ¼ teaspoons Pepper
  • ⅓ cups Half-and-half
  • ¼ cups Sour Cream
  • 1 Tablespoon Chopped Fresh Cilantro

Preparation

1. Saute onion and garlic in butter until onion is tender, about 5 minutes.

2. Add ginger, chili powder, turmeric and cinnamon. Cook and stir for one minute.

3. Stir in tomatoes, tomato paste, brown sugar, salt and pepper. Reduce heat, cover and simmer for 10 minutes stirring occasionally.

4. Add chicken, half-and-half and sour cream. Simmer uncovered for 5 minutes more.

5. Remove from heat. Stir in cilantro. Serve over basmati rice or Indian fried rice.
