Description

A tasty burrito filled with shredded beef, tomatoes and onions!

Ingredients

  • 1 pound, 1-⅔ ounces, weight Beef Roast
  • 1 whole Onion
  • 2 cloves Garlic
  • 1 whole Tomato
  • 1 whole California Chile
  • 1 Tablespoon Olive Oil
  • 1 package Flour Tortillas, 8 Or 10 Count
  • Optional Garnishes: Beans, Avocado, Etc

Preparation

This is a favorite authentic Mexican burrito, that my husband and I love. Burritos de Machaca are filled with shredded beef, tomatoes and onions.

First take your meat and cut off any fat that you don’t want to eat and rinse the trimmed meat with water. Next chop your onion in half and peel garlic cloves. Fill a pot with water and put meat, half of the onion, and garlic inside. Bring to a boil and let cook for 1-2 hours (till meat is tender).

While meat is cooking, finely chop the tomato and other half of onion. Set aside.

Now for the chile, let it roast over medium heat on stove top. Let cook for 3-5 minutes on either side (skin should have some burnt spots). Remove and let cool. Once cooled, peel off blackened skin and remove stem. Rinse with water, and dice.

Once meat has cooked long enough, remove from water and shred it. Reserve 1/2 cup of water.

Heat 1 tablespoon oil in pan over medium heat. Add diced onion and let cook for 2-3 minutes. Add tomatoes and chile, let cook for another 5 minutes.

Next add in the shredded beef. Sprinkle with salt and mix well. Add in 1/2 cup reserved water, and stir.

Finally warm up some flour tortillas on a skillet. Grab a spoonful of meat and drop into the middle of tortilla. Roll it up and serve with beans and avocado! Enjoy!
