This quick and easy Mexican dinner can be made just how you like it. It is a burrito without the tortilla, loaded with all of your favorite toppings.
Grill the chicken with your favorite seasonings and slice into thin strips. Cook the rice and beans.
Layer rice, beans, and chicken in bowls. Layer with additional toppings (salsa, sour cream, cheese) and serve. Feel free to change the toppings out to fit your taste or dietary needs. This dish can easily be made for vegetarians.
