Put the cooked, shredded chicken into a medium sized bowl. Mix hot sauce, salt, pepper, garlic, and Italian seasoning in a small bowl. Pour hot sauce over the chicken and mix well.
To prepare lettuce cups, place 1/2 cup Buffalo chicken in each leaf, top with celery and dressing of your choice. Wrap it and eat!
