Description

This is one of my husband’s favorite meals. Easy and delicious everytime!

Ingredients

  • 1-¼ pound Chicken Breasts, Cut Into Bite Size Pieces
  • ⅓ cups Buffalo Wing Sauce
  • 6 cups Frozen (thawed) Southern-style Hash Brown Potatoes
  • 1 cup Light Ranch Dressing
  • ½ cups Shredded Cheddar Cheese
  • 1 can (10.75 Oz. Can) Condensed Cream Of Celery Soup
  • ½ cups Corn Flake Crumbs
  • 2 Tablespoons Melted Butter

Preparation

1. Heat oven to 350ºF. Spray a 13×9-inch baking dish with cooking spray.
2. In a medium bowl, stir together chicken and wing sauce.
3. In a large bowl, stir together thawed potatoes, ranch, cheese and soup. Spoon into baking dish. Place chicken over potato mixture.
4. In a small bowl, stir together corn flakes and butter. Sprinkle in the baking dish.
5. Cover with foil. Bake 30 minutes; uncover and bake 25 minutes longer until potatoes are tender and chicken is no longer pink.

FYI I’ve tried uploading a photo about 10 times, but am unable to for some reason… Also, if you use light ranch & light cheese the calories come to 411 per serving. So not too terrible. Glad you liked it! :)

Im going to make this tonight! But, Im going to use panko breadcrumbs instead of corn flakes because I dont like cornflakes! Ill let you know how it goes!

This is fantastic! My kids ate it up with no complaints, and my husband even went back for seconds, something he never, EVER does. I think it could be even better with green onions and bacon crumbles on top, but that would of course add to the fat/calorie content if you’re watching that sort of thing! We ate it with a side salad, but celery would be clever as well.

This recipe was super good and everyone loved it! My store didnt have celery soup so I used cream of mushroom and it worked well, too! I also used panko breadcrumbs instead of corn flakes because I dont care for cornflakes & didnt want to buy a whole box just for one recipe! I would deffinately make it again, but not too soon because with all the ranch dressing and soup its not the most healthy dish! ;-) But very yummy!
