Description

I found this recipe on one of the many food blogs I follow and fell in love, adapting it to my own tastes! I hope you like it!

Ingredients

  • 4 ounces, weight Fettuccine Pasta
  • ½ cups Unsalted Butter
  • 2 whole Eggs
  • Salt And Pepper, to taste
  • Optional Garnishes: Grated Parmesan, Grated Nutmeg

Preparation

1. Cook the pasta in a large, salted pot of boiling water until al dente (cook according to package instructions for al dente). Drain the pasta, reserving about 1/4 Cup of pasta water. Set the pasta and the water aside.

2. Melt the butter in a large skillet over medium heat. Add the eggs and fry them, spooning butter over the top, until the whites are set but the yolks are still runny. Remove eggs from skillet and set aside.

3. Add pasta to the skillet and toss until hot, adding a little pasta water to keep it saucy. Season with salt and pepper.

4. To serve, top the pasta with the fried eggs and sprinkle with Parmesan and nutmeg. Enjoy!
