Description

A simple broiled chicken recipe full of flavor from the chicken thighs and the artichokes. Top with feta for a finishing touch.

Ingredients

  • 6 whole Boneless, Skinless Chicken Thighs
  • 14 ounces, weight Jar Of Artichoke Hearts In Oil
  • 3 cloves Garlic, Minced
  • 1 teaspoon Dried Oregano
  • Salt And Pepper, to taste
  • ¼ cups Crumbled Feta Cheese
  • 2 Tablespoons Fresh Parsley, Chopped

Preparation

In a baking dish combine chicken thighs with artichoke hearts (including the liquid). Put the dish into the refrigerator and let the chicken marinate for at least 20 minutes.

Then drain all the liquid and add garlic, oregano, salt and pepper and mix to combine. Preheat the broiler in your oven.

Place the mixture on a baking sheet and broil on the top rack in your oven for 10 minutes. Turn chicken over and broil for another 10 minutes. Then sprinkle feta onto the top of the chicken mixture and continue to broil for another 3-4 minutes. Remove pan from the oven, sprinkle with fresh parsley and serve with rice pilaf.

YUM!!!!! This recipe is SOOO good! And it’s so easy, too. I was kind of dubious about broiling everything for so long – but it turned out perfectly. (If you have any chicken thighs that are a little smaller than the others, just take them out a little early.) I served steamed broccoli with lemon juice on the side, and it was a great accompaniment.

This is so simple but so good! I used a whole 33 ounce jar of artichokes (costco size) because I know I love them and i am glad I did because even with only 6 boneless thighs it was definitely just enough artichokes. Next time I will marinate all day too. I usually make a “kitchen sink” pasta dish with these ingredients and whatever else is in the fridge but this is nice if you just want to make a quick weeknight meal with veges and rice. Thanks for the new weeknight option!
