Description

Cajun chicken, mushrooms, colorful bell peppers and a spicy cream sauce has made this dish the most requested by family and friends!

Ingredients

  • 1 package (16 Oz. Package) Farfalle (bowtie) Pasta
  • 3 whole Boneless, Skinless Chicken Breasts, Diced
  • 2-½ Tablespoons Cajun Seasoning, Divided
  • 1 whole Red Bell Pepper, Sliced
  • 1 whole Orange Bell Pepper, Sliced
  • 2 packages (5 Oz. Package) Sliced Mushrooms
  • 4 whole Green Onions, Chopped
  • 2 Tablespoons Olive Oil
  • 2 cups Heavy Cream
  • ½ teaspoons Dried Basil
  • ½ teaspoons Lemon Pepper
  • ½ teaspoons Salt
  • ¼ teaspoons Garlic Powder
  • ¼ teaspoons Ground White Pepper
  • 1 dash Ground Black Pepper

Preparation

Place diced chicken breasts and 2 tablespoons Cajun seasoning into a large Ziploc bag and shake to coat. (For best flavor, marinate for at least 30 minutes.) In a large skillet over medium heat, saute the chicken in olive oil until thoroughly cooked.

Add the bell peppers, mushrooms and green onions. Saute and stir for 3 to 5 minutes or until vegetables are tender yet still slightly crisp. Reduce heat and add the cream, basil, lemon pepper, salt, garlic powder, white and black peppers and 1/4 teaspoon Cajun seasoning. Bring to a low boil, reduce heat to low and simmer.

Bring a large pot of lightly salted water to a boil and add pasta. Cook according to package directions or until al dente. Drain and return to pot. Add chicken and cream mixture and toss to coat. Serve topped with freshly grated Asiago or Romano cheese.

I made this last wee and it was really good! I did change a couple of things since I didn’t have all the ingredients in my kitchen. . .
I used whole wheat angel hair pasta instead of bowties, I omitted the mushrooms and instead of using heavy cream, I made a white sauce with butter, flour & skim milk. It turned out so great, my husband wants it again this week! Thanks for sharing!

This is EXCELLENT!!! I used more cajun seasoning than called for, and instead of the cream sauce I just used jarred Alfredo sauce…..scrumptious!!!

Delish! I did make some changes – I always do!

no mushrooms, more peppers
1 cup half-and-half and 1 cup skim milk with a few teaspoons of cornstarch instead of all that delcious heavy cream
no white pepper
I sauteed the chicken pieces in chopped garlic and oil

I really enjoyed this, minus the lemon pepper seasoning. I’ll definitely make this again and either use less or omit it all together. Thanks!

This was absolutely scrumptious and got rave reviews from my daughter and husband. I did omit the mushrooms (dang the mushroom haters in my house!), used half & half instead of heavy cream, and add some andouille sausage for extra punch. I was asked to put this recipe in my rotation, so its definitely a winner!
