This is whimsical play on an original that becomes quite chic when it is the star of a dinner. If you are looking for a way to use your beautiful summer tomatoes, try BLT Pasta for an easy and delicious dinner!
Bring a large pot of salted water to a boil.
While waiting for it to come to a boil, put the bacon on to fry over medium heat. Cook the bacon until crisp, and then set aside to drain on a paper towel. (Save the pan and drippings.)
Cook the pasta according to manufacturer’s directions.
Combine the garlic, lemon juice and olive oil in a small bowl. Add the vinaigrette to the pan and bring to a simmer. Add the pasta to the pan and toss with the hot vinaigrette.
Add the chopped bacon and the arugula, basil and cherry tomatoes to the pasta and toss.
Season with kosher salt and black pepper and serve on a platter.
Suggestion: Top with crab if possible.
