Saute bacon in a large pan over medium heat until crisp. Remove bacon from the pan and drain off fat. Add the oil into the pan and when it’s heated add shallot, garlic, carrots and celery and saute until tender. Add the oregano and saute 1 minute longer. Add salt and pepper to taste. Add the lentils and and chicken broth, cover the pan and simmer everything until the broth has been absorbed and the lentils are tender about 30 minutes. Then crumble the bacon and add it into the pan and stir to heat. Garnish with parsley.
