Description

Getting this meatless burger together had the workspace around me smelling like springtime! There are bunches of different veggies in these burgers that provide great flavor and texture.

The nice thing about this recipe is that you can substitute your favorite vegetables, beans and even spices.

I made corn salsa as a topping for the burgers (goes great with chips, too!), but top them with whatever you prefer!

Ingredients

  • FOR THE BURGERS:
  • 1  Carrot, Peeled And Diced
  • 1 can (15 Oz. Size) Black Beans, Rinsed, Drained And Mashed
  • ½ cups Celery, Diced
  • ½ cups Red Bell Pepper, Seeded And Diced
  • ½ cups Onion, Diced
  • 2 cloves Garlic, Minced
  • ¼ cups Oats
  • 1 cup Panko Breadcrumbs
  • ½ teaspoons Ground Black Pepper, Or More To Taste
  • 1 teaspoon Creole Seasoning (more Or Less To Taste)
  • ½ teaspoons Salt, More Or Less To Taste
  • 1 cup Salsa
  • ¼ cups Flour
  • FOR THE CORN SALSA:
  • 2 cups Corn Kernels
  • ½  Jalapeno Pepper, Seeded And Diced
  • 2  Green Onions, diced
  • 3  Medium-sized Tomatoes, Diced
  • 1 teaspoon Fresh Parsley, Chopped
  • 1  Lime, Juiced
  • 1 teaspoon Salt To Taste
  • 1 teaspoon Ground Black Pepper To Taste
  • 1 teaspoon Ground Red Pepper, to taste
  • 2 cloves Garlic, Minced

Preparation

In a medium sized bowl, mix together all of the ingredients for the corn salsa and chill for about an hour before serving.

For the burgers: Preheat your oven to 425 F. Spray two baking sheets lightly with nonstick spray and set aside.

Add the carrot to a bowl with a little water, cover it and microwave for about two minutes. Then remove the cover and allow the carrots to cool. Drain excess water.

Mash the black beans in a large bowl. Once cooled, mash the carrots and add them to the mashed black beans. Mix together then add the remaining vegetables and mix well.

Add the oats, breadcrumbs, seasoning and salsa. Mix together until combined. Add the flour and mix well. If the mixture is too moist, add more flour and adjust the seasoning, as needed.

Form the mixture into patties and place them on the baking sheets. Bake at 425 F for about 20 minutes, flipping them halfway through cooking. When the burgers are finished, serve them with the corn salsa or your favorite topping.

These were very tasty…a little gooey on the inside, but tasty. 2 minutes wasn’t long enough for the carrots and they were still a little firm when I mixed them with the black beans, so I ended up using my food processor to mix everything, which meant I added more flour, but they turned out great. The salsa is a nice addition, as well. Our grocery store was out of zucchini, so I used a yellow squash in place and it blended nicely. Thanks for sharing this recipe! We’ll make this again and try different things!
