Description

Best Salmon With Lemon and Thyme first seared in a cast iron skillet and then baked at high heat to achieve the most delicious salmon you have tasted yet! Served with roasted red potatoes and zucchini.

Ingredients

  • 5 whole Red Potatoes, Cubed
  • 1 whole Zucchini, Cubed
  • 2 cloves Garlic, Crushed
  • 1 Tablespoon Olive Oil
  • ¼ teaspoons Italian Seasoning
  • ⅛ teaspoons Garlic Powder
  • FOR THE SALMON:
  • 3 whole Salmon Fillets
  • 1 pinch Kosher Salt
  • 1 pinch Black Pepper
  • ½ teaspoons Dried Thyme
  • ½ whole Lemon
  • 1 Tablespoon Olive Oil

Preparation

Preheat oven to 375℉.

Add cut up potatoes and zucchini to a medium bowl. Add garlic, olive oil, and seasonings to bowl. Stir well until vegetables are evenly coated. Transfer vegetables to a foil-lined baking sheet and roast for 45–50 minutes.

Begin prepping salmon when vegetables are roasting. Preheat oven to 400℉ when oven is available.

Add fillets to a plate and season with salt, pepper, and dried thyme. Squeeze lemon juice over each filet.

In cast iron skillet, heat olive oil on medium heat. Add salmon skin side up and sear for 1 minute. Remove from heat. Carefully turn filets over and bake at 400℉ for 7–10 minutes. Fillets should be flaky and opaque. Check after 7–8 minutes if done, being careful not to overcook the salmon.

Serve salmon with roasted vegetables.
