Description

Handy dandy comfort food at its best. What’s not to love?

Ingredients

  • 1 package (2 Count Size) Refrigerated Pie Crusts
  • 4 cups Leftover Beef Stew (beef, Veggies, Liquid), Chopped
  • 4 Tablespoons Butter, Melted
  • Flour, For Your Work Surface

Preparation

Remove pie crusts from package and let them sit for fifteen minutes to come to room temperature. This will ensure that they will be easy to handle without breaking.

Preheat oven to 425 F.

Lay out the crusts on a lightly floured surface, and cut four 4 inch circles from each crust. Add the scraps together and make one more. You will have a total of 10 when using a 2 pie crust package.

Place the crust circles on a Silpat or parchment lined baking sheet. Spoon a couple tablespoons of stew into the center of each disc then fold the crust over the filling to create a semi-circle. Press the edges with the tines of a fork to seal. Use a sharp knife and cut a couple slits in the top of each to vent. Brush the assembled pies with melted butter.

Bake at 425 F for 15-18 minutes until golden brown.
