Description

I made the curry using ingredients that I had on hand and my son loved it. Serving this dish over rice noodles makes it gluten-free. You can also serve it over rice or simple with some sautéed vegetables. You can adjust the spices to your liking. Some like it hot, some like it mild.

Ingredients

  • 1 pound Inside Round Steak
  • 1 Tablespoon Oil, Or As Needed To Cook Beef
  • ¼ cups Red Onion
  • 2 cloves Garlic
  • 1 teaspoon Fresh Ginger
  • 1 teaspoon Sambal Oelek
  • 2 teaspoons Curry Powder
  • 2 Tablespoons Soy Sauce
  • 2 teaspoons Lime Juice
  • ¼ cups Roasted Peanuts
  • Rice Noodles, To Serve

Preparation

Cut beef in thin slices (I used Black Angus). In a nonstick skillet, add oil and sauté beef over medium-high heat for 3–4 minutes. Add red onions, garlic, sauté for about 4 minutes. Add fresh ginger, sambal oelek, curry powder; cook, stirring, until fragrant, about 45 seconds.

Add soy sauce, lime juice and peanuts. Sauté another 30 seconds. Server over rice noodles.

You can find sambal oelek in the speciality section at the grocery store. If you can’t find it maybe use: sriracha

I”m officially addicted to this. it seemed so simple at first and I wasn’t sure, but once I made it I immediately wanted more, I was pulling peanuts from the pan the next day just to get more and have been seriously contemplating making it weekly since trying it, I have held off for a week or so, but will probably cave next week.
