Description

A hearty, robust AND healthy comfort food that will make your soul sing.

Ingredients

  • 1 pound Bacon, Fried And Crumbled
  • 1 bag (1 Pound Bag) Great Northern Beans
  • 1 whole Onion, Diced
  • 1 Tablespoon Minced Garlic
  • 2 cans (8 Oz. Can) Tomato Sauce
  • 10 cups Chicken Broth
  • 2 cans 15 Oz. Carrots, Diced Or Sliced

Preparation

Sort and soak beans overnight, or follow instructions on the bag for quick soaking.

In a large crock pot, put all the ingredients except the broth. Cover everything with the broth until all is covered with at least an inch of liquid. Cook on low for 6-8 hours or until beans are tender. This makes a very large pot. You can reduce the amount by using a smaller bag of beans and cutting the rest of the recipe in half.

The original recipe calls for the bacon, but ham steaks with the fat trimmed can be used for a healthier substitution with the same taste results.

This recipe freezes well.

This recipe was very easy to follow and perfect after a long day at work. It gets better over time too. I like the leftovers even better than when it’s just made. Also, freezes well…a plus in my book.
