Ingredients

  • FOR THE SLAW:
  • 2 Tablespoons Apple Cider Vinegar
  • 1 Tablespoon Honey
  • 1 Tablespoon Brown Mustard
  • 1 Tablespoon Mayonnaise
  • 1 whole Apple, Cut Into Matchsticks
  • 2 cups Shredded Green Cabbage
  • FOR THE BARBECUE SAUCE:
  • 2 Tablespoons Brown Sugar
  • 2 Tablespoons Apple Cider Vinegar
  • 2 Tablespoons Ketchup
  • 1 Tablespoon Worcestershire Sauce
  • 1 teaspoon Chili Powder
  • 1 teaspoon Onion Powder
  • 1 teaspoon Garlic Powder
  • FOR THE TACOS:
  • Olive Oil, As Needed
  • 1 pound Shrimp, Peeled And Deveined
  • Small Flour Or Corn Tortillas
  • ½ cups Queso Blanco Or Cotija Cheese, Crumbled
  • Sliced Green Onions, Cilantro Leaves, And Lime Wedges, For Serving (optional)

Preparation

For the slaw:
Combine vinegar, honey, mustard, and mayonnaise in the bottom of a bowl until creamy. Add the apple and cabbage and toss to coat. Taste, and adjust the seasonings of the dressing to your preference.

For the BBQ sauce:
Combine all ingredients in a bowl, stirring vigorously to combine. Taste, and adjust seasonings to your preference.

For the tacos:
Heat a large skillet to medium-high heat with a drizzle of olive oil. When pan is hot, add shrimp in one even layer. After 2 minutes, flip shrimp and pour BBQ sauce into the skillet. Let the shrimp finish cooking for 2 minutes until cooked through and sauce has reduced.

Layer taco shells with slaw, shrimp, cheese, and any toppings you’d like. Enjoy!
