Description

A great way to use leftover chicken! Not just an everyday BBQ chicken sandwich, but so much more!

Ingredients

  • FOR THE CHICKEN:
  • 2  Boneless, Skinless Chicken Breasts, Cooked And Shredded
  • ½ cups BBQ Sauce
  • ½ cups Onion, Diced
  • FOR THE COLESLAW:
  • 1 cup Nonfat Greek Yogurt
  • 1 Tablespoon Sugar
  • 1 Tablespoon Vinegar
  • ½ teaspoons Celery Salt & Celery Seed
  • 1 teaspoon Pepper
  • 2 cups Cabbage, Shredded
  • 3  Carrots, Thinly Sliced
  • ½ cups Red Onion, Diced
  • FOR THE SANDWICHES:
  • 4  Whole Wheat Hamburger Buns
  • ½ cups Pickled Jalapeños

Preparation

For the chicken:
In a medium sized pot, add the cooked/shredded chicken, BBQ sauce, and onion. Let it simmer over low heat for 10-15 minutes. Add more sauce or a bit of water if needed so all of the meat is coated.

For the coleslaw:
In a small bowl combine yogurt, sugar, vinegar, and all the spices. Stir well, taste and adjust seasoning if needed or add more vinegar.

Toss all veggies together in a large bowl, add dressing and toss well to coat. Taste, and adjust seasoning again if needed.

For the sandwiches:
Place a good dollop of chicken mixture onto a bun, top it with coleslaw and pickled jalapenos. Serve with extra BBQ sauce for dipping and sweet potato fries on the side! Enjoy.
