Description

The inside is moist and flavorful and with these, there’s more of my favorite part of meatloaf: the crusty exterior.

Ingredients

  • 1 pound Ground Beef
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • ½ teaspoons Tony Chachere's Creole Seasoning
  • 1 whole Egg
  • 1 Tablespoon Milk
  • 1 cup Bread Crumbs
  • 1 cup BBQ Sauce
  • ¾ cups Picante Sauce (Pace)
  • 1 Tablespoon Worcestershire Sauce

Preparation

Season the ground beef with the salt, pepper, and Tony Chachere’s. Beat an egg with the milk and add it to the meat along with the bread crumbs.

Mix the BBQ sauce, Picante sauce, and Worcestershire together in a separate bowl. Add half of the BBQ sauce mixture to the meat and reserve the rest.

Mix the meat mixture together and form into balls about 2 inches in diameter. Place them in a greased muffin tin and top each with the remaining BBQ sauce mixture.

Bake at 425 degrees F for 20 minutes. Makes 12 muffins.

Baking these now! I used mango salsa in place of the picante sauce and can’t wait to see how they turn out. I think the sweet will nicely balance the spicy BBQ sauce I used. Thank you for sharing this!

This got rave reviews and was so much easier than making a traditional meatloaf. And how easy to take for lunch or have for a snack! I will definitely be making these again!
