Description

Light and fresh Baja style grilled shrimp tostadas!

Ingredients

  • 2 teaspoons Chipotle Chili Powder
  • 2 Tablespoons Brown Sugar
  • 2 teaspoons Ground Cumin
  • 2 teaspoons Lawry's Seasoned Salt
  • 1 teaspoon Black Pepper
  • 2 pounds Large Shrimp, Peeled And Deveined
  • 1 Tablespoon Extra Virgin Olive Oil
  • 4 cloves Garlic, Minced
  • 4  Avocados
  • 3 cups Cole Slaw Mix
  • 1  Jalapeño, Seeded, Diced
  • 2 Tablespoons Freshly Chopped Cilantro
  • ½ cups Mayonnaise
  • 1 clove Garlic, Minced
  • 1  Lime
  • 3  Tomatoes, Diced
  • 12  Tostada Shells
  • 1 cup Crumbled Queso Fresco
  • 3  Limes, Cut Into Wedges

Preparation

For the shrimp: Whisk together the chipotle chili powder, brown sugar, cumin, season salt and pepper in a small bowl.

Place the shrimp in a large bowl, toss with olive oil and garlic. Add the spice rub and stir well to coat; set aside.

Heat grill to high.

Skewer shrimp with 2 skewers to prevent difficulty in turning shrimp.

Place skewers on the grill and cook until just cooked through, 2 to 3 minutes per side.

Cut avocados in half, remove seeds and scoop out pulp. In a small bowl, coarsely mash avocados and season with salt and pepper to taste.

In another medium bowl, combine slaw, jalapeno pepper, cilantro, mayonnaise, 1 clove garlic and juice of 1 lime. Set aside.

Chop tomatoes and set aside.

When ready to serve, each person can build their tostada as they wish. Start with a tostada shell and top with slaw, shrimp, avocado, queso fresco. Serve with lime wedges.

Delicious! I didn’t have enough shrimp, so I made a second pan with steak, using the same seasonings. Husband and kids all devoured it.

These were absolutely delicious! I made these for dinner tonight, and we all cleared our plates. We had black beans and sour cream as optional toppings. The tostadas were good with and without the additions. Thanks for a super easy, tasty, and healthy meal.

This is an excellent recipe! I baked my own tostada shells and used the toppings here (smashed avocado, queso fresco and Mexican-inspired coleslaw) plus Cuban-style black beans and spicy crema to create addictive tostadas. Thank you for sharing!
