BBQ sauce, cheese and bacon make this a quick and delicious weeknight meal
Preheat oven to 350 F.
Place the chicken breasts into a resealable plastic bag. Add BBQ sauce, seal the bag and shake to coat chicken breasts. Let them sit for 15 minutes while you cook the bacon. The bacon can also be cooked in advance when you are more pressed for time.
Cook bacon in a large skillet set over medium heat. Once it’s crispy, remove skillet from the heat.
Pull out 4 pieces of aluminum foil and set them on your work surface.
Remove chicken breasts from the bag one at a time and place each one on a foil sheet and loosely wrap it. Place the foil packets on a baking sheet and bake for approximately 30 minutes.
After 30 minutes, remove the baking sheet from oven and carefully open up the packets. Place 2 slices of bacon and a handfull of the cheddar cheese on each chicken breast and return to oven, leaving the foil open. The cheese will melt and the bacon will reheat (if you used premade bacon).
I usually serve this with some rice and broccoli on the side. Enjoy!

I’m pretty sure chicken on the bone takes longer to cook than boneless so I would just keep those dark meat thighs and drumsticks in separate packets and maybe pop them in a bit earlier than the boneless breasts.

This sounds quick and easy–and I *like* quick and easy! But I have a question: I like both white and dark meat. If I made up the packets with one breast OR a couple of thighs OR a couple of drumsticks, do you think the baking time would work out the same?
